Homemade Vegetable Stock...

I use a lot of Veggie Stock and for me this was the most practical thing to do by making my own and freezing it. the only thing is I use so much I just keep this in the fridge and keep making more and more...

1 Tbl Olive Oil or Water
1 Lg yellow onion, roughly chopped
2 celery stalks including a few leaves, roughly chopped
2 Lg carrots, peeled and rough chopped
3-5 scallions,rough chopped
8 garlic cloves, minced
8 sprigs of fresh parsley
6 sprigs of fresh Thyme
2 bay leaves
1 tsp salt or more for taste.
2 Quarts of water.

Heat oil or water in a large stock pot, add onion, celery, carrots, scallions, garlic,Parsley, Thyme,and bay leaves. cook over med heat for 5 to 10 min stir frequently.
add salt and water and bring to a boil. lower heat and simmer, uncovered for 30 min.
strain the Veggies and let the stock cool and store either in the freezer in jars or keep in the fridge a few days.
you can add any veggies you prefer have fun trying different ones or try roasting the veggies first for a more smokey flavor.
